Amazing and COOL summer treat -

Refreshing Summer Coconut Pops

A lot

I wanted to make a popsicle that was close as I can get to a coconut popsicle I had tried when I was eating cooked. So when we had young coconuts, it was time to experiment - Enjoy!

Ingredients:

1 Cup of Coconut meat from young coconut
4 Cups of coconut water from young cocnonut
1/8 cup of agave (add more if needed)
pinch of salt
2/3 Cups of dried shredded coconut (in the raw form - make sure you don't get coconut sweetened with sugar because that will add a ton of unwanted sugar and it won't be raw any longer

Preparation:

Blend all ingredients in high speed blender. Freeze in popsicle trays until solid. Enjoy!


*you can find young coconuts at Whole foods or local Asian markets for a pretty reasonable price - here is a link on how to open a coconut as it can be a little tricky
